No, The Jimbei and Jack thing is dead.....keep in mind characters switched off typically because they lacked the ability to fight the characters they were up against in Enies Lobby. we know Sanji probably can't fight Black Maria....but theres no actual reason why Jimbei's character wouldn't fight Who's Who if he's right in front of him. Brook can team up with chopper against Page One.

Sanji switched his Alabasta fight and he could totally beat them

Its not "dead". Jack has already been specified to be recovering. Oda isn't removing a Zoan Calamity without showing his hybrid, lets stop there. Now, Jinbe vs. Jack doesn't HAVE to happen, but Jack is coming back into the battles, its already been hinted by fodder than Ancient Zoans have stupid recovery rates.
