Even Shamrock feels mid apart from looking exactly like Shanks, Oda doesn't wanna make those guys feel like honorable combatants, they are the representation of privilege and arrogance, so that given, Sommers sums up all of that perfectly for me.
Dude comes from a CD family of one of the Gorosei, he enjoys killing toddlers, he thinks women are mere tools and even them having selfworth disgusts him, and he is good in all of that, he is living the best of what privilege and lack of empathy for the "inferior" could represent, thats why i think he is "cool".
I'm not saying Sommers is a poorly written character or anything. He's actually one of my favorite antagonistic characters in a quite a long while
Everything you listed will make Sanji's victory even sweeter. There's no Holy Knight I'd rather have him face
But out of all the Holy Knights he's far from the coolest among them. Shamrock is the commander with a mythical zoan sword that also just so happens to be Shanks' twin, Gunko has really cool arrow powers (one of Oda's best fruits in a while imo) and solo'd the Strawhats, Killingham also has a fairly unique devil fruit and pretty much everyone digs his hybrid form with his sick trident and trumpet
Holy Knight Garling was (mostly) ass but his middle aged and Gorosei designs are both clean and people are expecting a lot from him as Shanks' father
Sommers is an incredibly charismatic and entertaining villain but it's hard to consider him anything but a clown. Bodied by Gaban, bodied by Rayleigh, consistently bodied by the Roger Pirates in the past
This doesn't have to take anything away from you feeling like Sommers is cool I just disagree. I don't think Sanji ever really fights cool characters anyway (which is intentional from Oda imo)
Queen was funny and my favorite All-Star but I'd never call him cool. Bon Clay is one of Oda's best characters and a fan favorite but I don't think "cool" is the word I'd use to describe him

@kekaro made earlier where Sanji consistently gets the more colorful and expressive opponents that are usually narratively more important than anyone in that faction barring the n1 guy

The thorns scale based on love thing is symbolic to the more you love someone the tighter you hold them and the tighter you hold them the deeper the thorns pierce you. I don’t think the actual thorns grow more powerful

As for Power of Love - it's no coincidence we saw Garp's fist on fire this arc, imo. He is the OG Power of Love user. Look at this fist.

Roger's final attack on GV was also fire-themed. I wouldn't be surprised if he had PoL also, or Luffy for that matter. There appears to be a strong correlation between Conquerors and PoL.
Sanji was born with more emotions than anyone, and I expect his awakening being saved for last is going to translate into something dramatic.
