I'm not saying Sommers is a poorly written character or anything. He's actually one of my favorite antagonistic characters in a quite a long while
Everything you listed will make Sanji's victory even sweeter. There's no Holy Knight I'd rather have him face
But out of all the Holy Knights he's far from the coolest among them. Shamrock is the commander with a mythical zoan sword that also just so happens to be Shanks' twin, Gunko has really cool arrow powers (one of Oda's best fruits in a while imo) and solo'd the Strawhats, Killingham also has a fairly unique devil fruit and pretty much everyone digs his hybrid form with his sick trident and trumpet
Holy Knight Garling was (mostly) ass but his middle aged and Gorosei designs are both clean and people are expecting a lot from him as Shanks' father
Sommers is an incredibly charismatic and entertaining villain but it's hard to consider him anything but a clown. Bodied by Gaban, bodied by Rayleigh, consistently bodied by the Roger Pirates in the past
This doesn't have to take anything away from you feeling like Sommers is cool I just disagree. I don't think Sanji ever really fights cool characters anyway (which is intentional from Oda imo)
Queen was funny and my favorite All-Star but I'd never call him cool. Bon Clay is one of Oda's best characters and a fan favorite but I don't think "cool" is the word I'd use to describe him
It's kinda similar to a point @kekaro made earlier where Sanji consistently gets the more colorful and expressive opponents that are usually narratively more important than anyone in that faction barring the n1 guy

It might not be literal but you never know with One Piece
Consuming the Yami DF automatically amplifies all the pain you feel from the damage you take
I wouldn't be surprised if the briar fruit had some wonky interactions as well

He's a briar man. A briar is a thorny brush.

As for Power of Love - it's no coincidence we saw Garp's fist on fire this arc, imo. He is the OG Power of Love user. Look at this fist.

Roger's final attack on GV was also fire-themed. I wouldn't be surprised if he had PoL also, or Luffy for that matter. There appears to be a strong correlation between Conquerors and PoL.
Sanji was born with more emotions than anyone, and I expect his awakening being saved for last is going to translate into something dramatic.

Summers is pretty much the most sleazy and the most involved hater, it depends what people mean with cool i guess. They are people who think baldmingo is cooler than any other villain too 
Beyond Crocodile’s character he just has that swagger that a lot of OP villains lack. Plus his outfit is pretty much unmatched
Croc is far from the strongest but I haven’t liked very many villains in OP more than Croc in that Impel Down - Marineford stretch (amazing in Alabasta as well, obviously)

I get your reasoning, but like Queen, Sommers has also that goofy side that makes him more diversified. Probably you have an idea of "coolness" for more stoic characters and that's ok. For me Sommers is "cool" because seems like he does not give a fuck to show how weird he is. Just look at his first apperance, in pants sits on his throne and I also like a lot his design. But he also can be the cool stoic one.

Yeah Queen was amazing I’m still hoping we see more of him. His whole “funk” thing was super funny and the anime adaptation of it was perfect. It made me like him even more
I think King is “cooler” than Queen but he’s a pretty corny character to me. I see the appeal of his design and all that but there’s very little underneath it
He has no real “character” to speak of besides being a Lunarian lol
Nah I’m not even a big fan of stoic characters. Goofy characters can be cool too. Katakuri is incredibly goofy at times (he literally tore his mouth open cause he loved donuts so much) but he’s still really cool
It’s everything from the design, to the way he fights, to the way he carries himself, and also how he’s treated in the story
Sommers is lame and is treated as such by Oda. He’s the only Holy Knight present that’s lost at all and in every possible exchange he’s been in he got clowned
But all of these things make Sommers more “relatable” and entertaining to me. He feels like the type of antagonist that punches down and picks on people weaker than him. And with his dialogue regarding love and how painful it can be this makes him the perfect Sanji opponent
I wouldn’t have it any other way. Like imagine the satisfaction when Sanji pummels him

I understand where you’re coming from and he’s definitely the hype tool of the Holy Knights
But I feel like that works because of how expressive he is
It doesn’t really fit to have the same thing happen to someone like Gunko or Killingham. Similar to how what happened with Greenbull is hard to envision happening to any other Admiral
To me someone being a “scrub” can work. I actually enjoy the scenes where Sommers gets bullied because I think they’re fairly well done
The WiFi haki moment is trash though. Not a fan of that one due to the poor writing surrounding it
