Yeah... Luffy didn't fight Doflamingo, Moria, or Lucci for 11 hours. This guy dragged Luffy into deep waters and Luffy got by very explicitly because of Nami's help. The tension wasn't in whether or not the very first guy on the island would beat Luffy before he even got a chance to see Sanji, lmao, the tension was that just one of her underlings could take Luffy to the limit right out of the gate and there were hundreds more enemies not including the Vinsmoke family members. Cracker himself was never supposed to be relevant.
As far as offscreen goes, there's absolutely no narrative reason to have shown more of that fight. We're told it was a repetitive hit and run stalemate for half a day, no idea what anyone wanted them to show or why lol
