They will fight Admirals/Admiral equivalents because those will be the next step. It's not complicated. The Straw Hats aren't stagnant. They grow stronger over the course of the story. This is the exact same discussion we had about the Commanders, and now look.

True, but it’s times like these I prefer examining the dynamics. I’d prefer Zoro vs Issho because of their little tussles during Dressrosa, and the fact it’d be an honourable duel between warriors that respect each other.
I think it’s inspired. It calls back to his dream and the fact he is a sea faring cook that is said to smell like sea food, and he is the best swimmer of the original 5 Strawhats.
