do a bunch of the online raids (lower ranks from 1* - 3*) and you should get a decent amount of exp candy, and then keep repeating this until you have enough to level your team past their level. and you can basically let the other players carry you if you're still underleveled
or keep battling wild pokemon/trainers near the gym you're interested in battling until your entire team is up to par
Catching Pokemon gains decent amount of EXP, there's also the EXP candies you get from doing the raid battles. Even the small tier candies give quite a bit of exp, about the same would get just from fighting a trainer.
Also try not to avoid trainer battles too often, it's very easy to do with S/V being open world.

Hey! Hey! That's a great choice. Actually I checked the final forms and design wise I liked Meowscarada the most. That time I didn't know it has a 100% critical hit move called flower trick and has great speed etc. it just appealed me more than the other two.
