That's simply because they follow the logic of
Cutting down what needs to be cut instead leveling the whole fuckin city.
Koushirou alresdy told us that , a good swordsman is that person who cuts what he wishes to cut and not cut what he doesn't wish to.
The one who cut everything, is simply a dangerous man.

And Swordsman do have lot of attacks for AoE.
Zoro Dragon Twister being one of them, Size and Power is controlled.
Mihawk sliced off huge Ice berg with just a swing.

Yeah and I mean, they don't need it. WB flexes with his fruit and creates huge ass tsunamis. But those kind of attacks are nothing to top tiers who simply avoid taking them point blank. Just like Boro Breath. Looks cool, does a lot of destruction but some Garp would just Soru his way out and Galaxy Impact kaido's head directly.

Swordsmen or Haki bros in general are just different.

Mihawk casually cutting a multiple km wide iceberg from multiple km away is probably the most fucked up feat in OP ever. Imagine he pulls a serious attack (maybe even a named one, if he has them) with Adv CoC. Dude would cut the entire fucking planet. Would it look cool? Yes. Would it do the job? Rarely.

BG isn't a viable option against the top swordsmen, to begin with.

No attack is viable to swordsman if you're arre a brawler tbh.
Throwing hands in front of a swordsman is the dumbest thing you can do

They are not exceptions its just that they specialize in armament Haki. Luffy himself said it his haki is not yet on level to tank Hody piercing attacks and Katakuri directly said there are levels to armament haki. Oda made it clear Luffy specialize in conq while Zoro in armament haki.

This arises from the fact top Swordsman dont have any devil fruit so their bread and butter would be armament haki unlike with others who can focus on their devil fruit and haki . Luffy having stronger conq haki than someone doesnt instantly makes his armament or observation haki superior too.

Kaido is same case as Luffy his main thing is his devil fruit power and conq haki usage , each of his kanabo attacks were shown with acoc haki. Both Kaido and Luffy may easily have inferior armament than Zoro and that would actually make perfect sense when in comes to powerscaling.

Zoro speed blitzed Kaido which means Kaido did not even have time to put armament haki for defense. I dont really even remember Kaido using armament for hardening part of his body for defense. It may be the case that his dragon scales provide better defense than armament hardening does , remember once you harded your body it no longer keeps properties of your devil fruit , Kaido or Doflamingo even mention that how Luffy is unique he keeps rubber properties while even in armament state something that should not be the case.
