I don't think it is fair to compare animated fights to non animated ones so I will not include non animated fights like zoro vs King
--So luffy g4 vs Doffy is my fav -- First time we see G4 and it is satisfying to see luffy trashing doflamingo like that after how doffy was build up to that point

zoro vs king is the greatest fight is the series, period.
it's sexy, lethal, full of top tier fast paced action, and enjoyable as hell.
it completely surpassed my expectations on so many levels.
it had the best conclusion of off very fight in manga history: zoro declaring himself to be a king.

I was hoping Zoro vs King would top it as it was looking real promising but I'd be lying if I said it topped Luffy vs Kat, not even 2 dedicated chapters in a row. It almost felt like Oda was getting the Zoro/Sanji fights out of the way before the Yonkou fights.
895 alone trumps anything Oda has drawn post timeskip he put a lot of effort into drawing that fight compared to Zoro vs King. The art and panelling was on another level for that Kat fight. Fight flowed so well on panel.
ZvK was cool, but I'm big on the fight choreography itself vs badass character content, still better than anything else post timeskip had to offer atleast. Zoro vs King was very cut throat but that alone can't carry it past superior choreography.

Luffy vs Kat flowed so smoothly, everything well drawn and easy to follow, the angles in the action shot panels were near flawless imo.
Zoro vs King was a bit messier and often choppier in comparison. Overall just elementary compared to Luffy vs Kat.
Like I said I'm a big fan of choreography itself, it weighs heavier than the content in the fight. I'm not gonna break down panel for panel why Kat vs Luffy is more visually appealing and better choreographed. I don't care enough to put that much effort, if you liked Zoro vs King more because it's cut throat/brutal and didn't get spoiled by comradery or w.e that's fine, you look for different things than me in a fight.
I understand sometimes simplicity is best, but the gap in actual effort put into drawing the two fights is too big imo.

In the end it comes down to preference
For me choreography of Luffy vs Katakuri was too run of a mill, there weren't any truly creative sequences besides one or two. Katakuri matching Luffys G3 with his own felt lazy too many and Katakuri vs Snakeman CqC was just the run of a mill CqC 101 besides that moment where Luffy and Zoro simultaneously attacked each other.
On top of that it was missing true brutality, there was barely any destruction and final sequence and finisher felt too low profile.
On top of that fight ran tooo damn long, Katakuri becoming Luffy fan boy in the middle of the fight rub me the wrong way too.
Zoro vs King on the other had had some crazy sequences starting out with Zoro blocking a King punch with his mouth, then clash of Devine spear vs Zoros ultra tiger hunt and then King blocking Tatsumaki with his wings and then wrecking Zoro with his sword.
The destruction like King's Taliban attack, King taking out chunk of the Island gave fight a greater threat level.
Then Zoros flash back and then the way he came about to figuring out Enma felt alot more creative than Luffy having just flash backs Rayleigh saying some shit and boom we got FS.
Zoro literally connected all the dots to figure out Enma.
And Finishing sequence of Zoro vs King was A LOT better.

I found King vs Zoro more entertaining due to have multiple tipe of fighting, from fire kicking, to pouching with spikes, to aerials fight, to extreme slashes, to super speed reaction movement from both, and a very cool swordsmanship where they both start equally, then after Zoro cut King mask, the momentum goes to King, which overpower Zoro also in his swordsmanship until Zoro get advcoc.
The fight was cool because King is like using two devil powers, one his dinosaur which grant him super incredible mobility and boost his physicals stats (which help for the choreography in a fight) and the second his race, which make his fire&magma attack impressive.
King design helps also, Oda went with the best first mate design possible for fighting Zoro.
Zoro vs King is 44 pages in total, each have fighting in it, no running, no subplot pure action and is full gas all the time.
This fight also changed so many times the surrounding which help the flowing of the actions.
Luffy&Kata is super cool but I cant stand that fight for 2 main reasons, was a training tool for Luffy, second the plot armor was insane I cant stand that shit
. There is also running in it which I am not a fun for a fight.
