He didn't die in the first place, he was just on deaths door. Awakening is likely caused by a near death experience when you're about to reach a peak in devil fruit mastery.

Luffy's heart stopped beating, Kaido thought once again that Luffy was dead. Luffy's only way to come back to life was to find a way to start his heart again, kinda like Enel did after he got hit by reject dial. Luffy achieved that with his only option, awakening his fruit, giving him almost unlimited capabilities of manipulating his body, and with that power he started beating his heart the way he imagined.

If the MC of an manga of 1000+ chapters would have died, we would have known in some more explicit way. Here we have CoO users saying they dont feel him anymore but we know from Skypiea that CoO couldnt distinguish the inner voice from the people and know if they are dead or KO.

He didn't die but he's unconscious his heart needs to stop beating for 10 minutes minimum to be pronounce clinically dead(10 mins no oxygen to organs especially the brain = dead)
