Shueisha won’t let One Piece end and money get away. I don’t think Oda himself will do any more work than the occasional one shot and designing video game and movie characters, but One Piece is going to continue. Videogames, movies, some dreadful One Piece Next Gen anime starring Shanks’ kid, manga drawn by his assistants, more spinoffs like the Ace one for popular characters, I’m expecting it all.
An outside bet is if Oda really wants to finish the series as soon as he can then he could probably cut half a year off the manga by having a canon Garp prequel movie.

By the way, I'd be more worried about Oda consciously excluding stuff from the main manga in advance of future continuations, complementary material, etc. that his bosses may be working on already. Something like "Don't solve this big mystery in One Piece so we can use it as decoy for fans to engage with our new hit, One Piece: Legends of the Lost History".
Tbh, I doubt this. Everything that supplemental so far has very little bearing on the plot and only seems to enhance stories of certain characters atm.
The mysteries are being set up for the main story, I expect them to be answered here. Oda seems to be more in charge of his work than other mangaka are, simply because its more well regarded than most other manga are in the industry. Not only that, its extremely long running and hes essentially the old guard that makes his own decisions
