It doesn't take away from the fact that those occasions are just bullshit imho. Oda doesn't need to write them, it doesn't add any value to the story, not even gags or anything. Yet he continues to do it. The "Jinbei staying behind" moment will now forever be remembered as only one of many gigantic fake-tension moments at the ending of WCI.
The problem is that Oda's intentions are crystal clear when drawing those moments yet they aren't as properly built as they could. For example, how the Merry came to save them was a great way to close the conflict between Luffy and Usopp and to encourage a consensus between their point of views, but some of the viceadmirals with best portrayal in the series just stood there without trying to attack them personally; they're the big issue here, in fact, because the whole whirlpool strategy could have worked in a common sea battle but, following Oda's recent statements about such battles, the vices were probably stronger than cannons.
What amazes me about this whole Jinbe's situation, though, is that I never took it as a big moment of tension. If Oda came and told me that he could escape easily by diving deeper than Oven's reach I'd be okay with it because I trust the capabilities of the Sun Pirates and I understood that the only reason why Jinbe stayed behind was character consistency: no reason for such a kind guy, the same guy who helped Luffy regain his sanity as he remembered his crewmates, to leave his friends.
Personally I find it to be way worse that ending with the Sunny seemingly sunken. That was, in my opinion, a true gigantic fake-tension moment from the beginning because no way would our ship sank like that. In Jinbe's case, I never saw any difficulty for them to run away underwater.

Not really, because I was addressing another users points focusing on Jinbe and we don't really have any information about the Vinsmokes fate. For all we know they could have been defeated or they could have flied away losing their whole Kingdom.
Actually what does NOT MAKE SENSE... is Jinbe having his moment with Luffy saying "I cannot leave those people to meet their death" and stay with them... only to leave alive by himself and escape while his crew buys him time to escape... what's the fucking point!? He should have left with Luffy if that's their end! WHAT THE FUCK

Yep, I'm pretty sure the reason for Jinbe to stay behind was achieved and he could in fact save his comrades. I wouldn't be surprised if he tells us that it took him so much time to reach Wano because he first wanted to help treating the injured.
And regarding what you wrote about Kanjuro and the first part of this post, again it is about execution: the idea behind Kanjuro kidnapping Momonosuke is kind of good because it is establishing the basis for an encounter with Kaido and for Momo's eventual growth as a character that overcame his weakness (and who knows, maybe even Kanjuro's redemption). I'm even confident that Luffy didn't try to save him because he trusted Momo's speech and wanted to push him to become a better self. But the characters involved in the scene did next to nothing to help the Kozuki, certainly not enough, and the Scabbards even found time to mock Kin'emon's stupidity while their lord was at risk of death.
