What do you mean by "all those Luffy's injuries"? Basically all the damage Luffy took in that arc was from some bats the first time he faced Moria.
Other than that there was just the burden in his body for using Gear 2 and 3.
Sanji is the one who endured the most serious damage in that arc, which was from a sword pierced through his torso when he was protecting Nami from Absalom. And he didn't need to stay in coma after that like Zoro. So the frail one was obviously not Sanji. Zoro wouldn't even have been able to fight Oars if that sword had been pierced through Zoro's body instead.
An extremely nerfed Sanji, almost falling down on his own, was knocked out by Zoro's surprise attack on a very specific location to knock someone out.

I assume he would have died. Sanji is an endurance monster too yes but let's be real his threshold was always lower. And well... Zoro barely survived. So hard to imagine that he'd survive.
