Post TS doesn't feel the same anymore since Oda shifted the focus from Straw Hats or soon to join Straw Hats into NPCs like Shirahoshi, Punk Hazard kids, Kinemon, Momo, Law, gladiator scrubs, Kyros, Rebecca, scabbards, Vegapunk.
WCI was good because the focus was about Straw Hat (Sanji) yet I didn't like Oda separating the crew.
I got to return to sabaody and instantly felt something was off, then Fishman island the straw hats were bland and the story was focusing on Fishman racism which I thought was dumb asf, punk hazard was boring and realistically so was Dressrosa, so yeah the further I got the less I could cope,

Punk Hazard got Vergo, and I liked Law vs Smoker fight.
Little Garden is worse than Drum but Baroque Works saga got likeable guest characters Vivi and Carue.
Drum Island >>> Egghead though. Nice Chopper's flashback, Chopper is joining, pre TS Chopper was very likeable, Luffy saving mama rabbit was cool, Zoro carrying Dalton because he was too heavy for Usopp was cool Zoro-Usopp moment.
Egghead was so bad, it focused on trash tier character of Vegapunk and the equally trash clones, and it dehyped Gorosei, treating them as incompetent punching bag, regen merchants.
Don't ever compare goat Drum Kingdom with trash Egghead anymore.

Disagree about your take on side characters.
Issue is the execution, not side characters. Dressrosa was amazing in part due to the side characters. Their narratives and sub plots were well executed, and had a good culmination with the SH grand fleet.
In Wano, they sucked cause they didn't really accomplish much, so they felt like pointless filler that wasted our time.
More emphasis on side characters is great for the world building, and makes the OP world feel larger than if everything was about SHs and their opponents. The main characters (ideally) don't exist in a vacuum.
Not to mention, strawhats are trash tier characters post timeskip anyway. I'd rather Oda focus just on legends and side characters at this point.

Different perspectives I suppose. The ones you mentioned were "mid" for me. Maybe boring at times, but didn't actively antagonize me.
Egghead almost made me drop the series. I still haven't read the chapters from end of egghead to start of Loki flashbacks. The flashback made me care for the series again

Iirc, aren't you Rebecca4Nakama supporter? Dressrosa would have been good if Rebecca joined. The fact she doesn't make Oda wasted so many chapters in irrelevant NPC / villagers character.
If we compare One Piece to a RPG like Final Fantasy, of course players prefer if the game focuses on playable characters' story and flashback, instead of random villagers from random town's story. Playable characters = main party = Straw Hats. Random villagers are characters like Shirahoshi, Mocca and PH kids, Rebecca, Kyros, Tontattas, gladiators, minks, Nine Red Scabbards. Wasting too much time on those local villagers NPC.

Sure, if the side characters are the rival / villain type like Blackbeard, Law, Smoker or Buggy. The world moves and not just revolves around the main characters / Straw Hats, I agree.
But the problem Oda shifting the focus too much to irrelevant villagers type like I said above..
It seems OP is already dragging too much that the Straw Hats already peaked their character development long ago, and now they are either being stagnant or regressing backwards like Usopp and Chopper.
I enjoy it for 20 years now, why should I like it less?
I overall like it more because it grew on me and it still has it's values.
