The thing is, is those Humandrills aren't normal. They have the capability to learn from Humans and imitate them. In all honesty, this would be extremely beneficial to Zoro. Santoryu is a style that he created of his own accord, so it is unique to him. It's not like Ittoryu or Nitoryu where those styles are plentiful, and had time to blossom over the years because so many use those styles and can refine them through constant battle with each other. The humandrills being able to mimic Santoryu would give Zoro a chance to face off against the style he created, and see where it's weak points lie, so he can refine it and make it better.
That's not to say that he didn't get some one on one training with Mihawk as well at some point during the time skip, but do you honestly believe that Mihawk spent two full years of his life training Zoro day in and day out? I find that pretty far fetched to believe given Mihawk's character. Those Humadrills mimicking Santoryu would be the perfect opponents to face off against in his downtime of training with Mihawk.
