I didn't make any reasoning. I simply pointed out what can be observed throughout the manga.
If what can be objectively observed heavily contradicts your subjective take on Vegapunk's words, then said take is wrong, and the problem is solved.
It is true, actually, and I said even if we limit that to just the number of ways humans can evolve it's still an unimaginably high number.

Vegapunk said nothing that challenged our knowledge about what devil fruits exist.
This is pretty basic. You have been reading the manga (allegedly), so you know they are actually rare, and thus it's impossible for there to be an effectively infinite amount (which is what they'd be if your claim was true).
what *things* are not included in Devil Fruits?
Paramecia covers physical attributes, Logia covers chemical attributes, and Zoan covers biological attributes. That's pretty much everything.

- That there is a category for "physical attributes" (which is not what characterizes Paramecias) doesn't mean that every single variation of physical attributes
must exist as a fruit.
- That there is a category for "chemical attributies" (which is not what characterizes Logias) doesn't mean that every single variation of chemical attributes
must exist as a fruit.
- That there is a category for "biological attributes" doesn't mean that every single variation of biological attributes must exist as a fruit.
Just ask yourself, are devil fruit users even close to be 50% of the cast of the series? No, they're a minority, and this is taking into account the story focus on the few places of the world where most devil fruit users gather, so devil fruits are extremely uncommon.
Otherwise, Kaido wouldn't go around creating fake, risky and inferior zoans instead of gathering actual zoans and spending a fortune on Doflamingo and Caesar. Otherwise, devil fruits wouldn't be considered a myth in the East Blue.
