Brook doesn’t have organs
I believe he has organs in his Astral body, and that's why he can still eat/poop; his "Soul" is still around his body, and, in the One Piece world, the Soul is more important than the physical body (Moria and Linlin are proof of this).
I firmly believe Lilith, Vegapunk Evil, will commit the crime of "necromancy" by using Organoid to regrow Brook's body.
If Brook had managed to find his body quick, after dying, he could have retained his organic flesh, IMO. The issue was he spent a year looking for it, and once he found his corpse he was all bones (and afro!).
Since Brook can eat/breathe (we've seen him inhale and exhale smoke), he is still a "living" being, most likely classified as undead for One Piece purposes.
Vegapunk can make full-grade clones of Shichibukai, there's no reason Lilith can't build Brook a new body by cloning his DNA from his Afro. I thought the Organoids would be use to heal Stella's injuries after Kizaru and Saturn got through with him, but, nope: we're regrowing Brook's nethers, so Soul King can Bone Wild.
Maybe something like a skinsuit? Ohhhhh, Skull-Suit, there we go.
Brook has never met Kuzan as far as I know in this series: Enies Lobby was before Thriller Bark, and Kuzan hasn't seen the Straw Hats since Enies Lobby.
Brook regrowing his body/skin will tie into him and Kuzan having a "JI-SAN???" moment, when Kuzan and Brook meet in the 4-Bidden Arc
The Astral/Heaven World in Elbaph makes me believe the Astral/Soul Body is real in One Piece, so, that's why Brook can still eat/breathe: it's his Astral Body, that we don't see, which is running the show.
Hence his skeleton going limp when he takes his Soul out; he's literally Astral Projecting his Soul out of his Skeleton.
Lilith regrowing Brook a body should also give him a sizeable power boost, making him officially at Franky and Robin's power level, rather than stuck somewhere between them and the Coward Trio.
