I unironically think this could be a thing that could exist

basically, I think observation coating is the highest form of observation haki, even above FS. With this power, the user uses his own observation haki to cancel out other people's observation haki by coating themselves with observation, making the user invisible to observation haki.

It can be used with enhanced speed, invisibility, or FS to make the user effectively invincible. I think as of now, Shiryu is the only person with such an ability. Having mastered CoA, I think he realized he could apply the principle of coating to CoO as well and as a result, created a new technique.

I do think that if you apply coc in a similar way to how you use coo you could unlock a new skill

One of the advanced forms of CoO, subconscious CoO, is likely a thing that can be done with CoC. Shanks seemingly did it on the whitebeard ship.

gives them Situational awareness Beyond Future sight
The can sense changes in air pressure like nami can just on a more precise level

I guess it's rather "coating your senses with haki" since observation haki itself acts like the sixth sense.
