Gojo defeating Sukuna "because he's the good guy" would have been a One Piss moment, even Sukuna winning in a dirty matter would have been a Laido moment.
If you actually tried thinking about JJK's themes, you would realise that Sukuna Embodies the selfishness that Gojo himself said is what is needed to be the strongest.
Gojo focused on improving Jujutsu Society and the next generation so that what happened to Geto doesn't happen to anyone else. Which is why he never "Broke" the Power system like Sukuna did with his Open Domain and One Time reset.
