It's a hard question, 'cause all the SHs are essential. All of them "saved the day" at least once or have an essential role in the crew (Nami and Robin particularly). A lot of people here is saying that Usopp is trash, but he possibly is the one who saved the crew the most. Here are each one's feats:

Luffy
- Captain, beats the arc's main antagonist (almost) everytime;
- Saved every crewmember at least once (except Jinbe);
- Joy Boy 2.0.

Zoro
- Saved Luffy, Nami, Robin and other crewmembers several times;
- Beats the second strongest enemy and at times hold his own against the main antagonist;
- Faced Kuma to save the whole crew back in Thriller Back;
- Took Kaido and Big Mom's Hakai head on and still helped the Alliance by defeating King.

Nami
- Navigator, probably the best in the world, essential to get to the end of the Grand Line;
- Saved Luffy, Sanji, Usopp a few times;
- Usually beats an enemy stronger than herself.

Usopp
- Was the only one capable of defeating Perona, thus saving the whole crew in Thriller Bark;
- Saved Luffy and Law from Sugar, thus saving the day in Dressrosa;
- Took care of Going Merry until the end, and the ship ended saving the crew in Enies Lobby;
- Motivated Luffy to get up and finish Rob Lucci in Enies Lobby;
- Powered Nami up with the clima tact.

Sanji
- Saved Luffy, Nami, Usopp, et al. several times;
- Beats the third strongest enemy and sometimes hold his own against the second or even the main antagonist;
- Opened the Gates of Justice for the crew to escape Enies Lobby;
- Incapacitated Big Mom with the Wedding Cake.

Chopper
- Doctor, essential for maintaning the crew's health against the Grand Line's dangers;
- Inadvertently saved Nami in Enies Lobby, by breaking the bathtub and washing Kalifa's soap;
- Saved Sunny and the crew from Caribou's ship near Fishman Island.

Robin
- Archaeologist, essential to deciphering the poneglyphs and thus reaching Laugh Tale and the One Piece;
- Saved Nami, Franky, Usopp, Law and others a few times with her DF powers;
- Saved Sanji from Black Maria and ended up beating her.

Franky
- Shipwright, responsible for the construction of the Thousand Sunny and its maintenance;
- Sunny's Coup de Burst saved the crew a few times;
- Provided a distraction for Usopp (and Robin) knock Sugar out and liberate the toys in Dressrosa;
- Protected Robin a few times (Enies Lobby, Thriller Bark, etc.) and Sunny too (Punk Hazard).

Brook
- Took a copy of Big Mom's Road Poneglyph in Whole Cake Island;
- Saved Zoro and Usopp from drowning in a cage with his powers in Fishman Island;
- Saved Franky and Robin from Tararan (the spider zombie) in Thriller Bark.

Jinbe
- Helmsman, saved the whole crew in WCI arc;
- Helped Luffy escape Impel Down and saved him from Akainu in Marineford;
- Saved Luffy again in WCI, by releasing him from prison;
- Gave his blood to Luffy after his battle against Hody Jones.

Considering the above, I'd say that Brook is the "least essential" strawhat, but without him the crew wouldn't be where they are now in the One Piece race and some of them (including key members like Nico Robin) would be dead.

Based on the role alone, Brook. Being a musician surely helps the team morale, but it's sort of an intangible help.
And to be honest, up until WCI Brook didn't really have many cool feats imo, and I was pleasantly surprised how Oda gave him so much needed spotlight.

@PeperLevi , as much as you may dislike Chopper as a character, SHP still need a doctor, there was even a plot point when whey specifically went out to find one. I also didn't like that virus plot in Wano, and I am overall not very happy with how Oda handles SHP post-TS for the most part, as the characters seem to be more one-dimensional than they used to be. But it is what it is, so far Egghead is the first arc I really enjoy post-TS (well, there were some cool moments here and there, but with Egghead it's more or less consistent).
On my first account,i was known as "the last Chopper's fan on internet". I was the person who had the biggest hope that Chopper's character would be fixed in shitty country arc.
I had the wish that Perospero would be Chopper's opponent. I said that this way,the slander Chopper received for being defeated by Perospero previously would pay off,and he would return to his pre ts greatness with renewed quality to new world standards.
💔 💔 😡 😡 But he was only cast aside again. That wasn't the only thing that made shitty country a atrocity,and it destroyed my enjoyement and excitement for OP.
I'm still mad at that stupid rabbit named Larrot,and the people who consider her a "good side character". She is one of the characters Lolda introduces in every arc,and teases them to be important when they are not,but on a worse level because she seriously plagued the story of a main character. It was because of her whin about Pedro's death that Perospero was throw away like some irrelevant garbage,and the last chance to fix Chopper was ruined. Can you imagine the space in the story that would have been saved if she and her dumpster of humanoid animals had died from the poison gas? That's what i meant by my complaint about Chopper not having the guts to let characters die.

I dunno, I didn't find the minks overly cool, but I also don't mind them? If we have fishmen, why not beastmen?
I was fine with Carrot, didn't want her for nakama, and mostly was unhappy with WCI supposedly being Sanji's spotlight, but Sanji still didn't get a cool fight or superior CoA. As the time passed, I am not salty anymore, I just have my hopes low now. And you know what? Egghead is the first arc where I have no expectations and so far I enjoy it the most out of all post-TS arcs.

BTW, have you been here for Carrot vs Yamato nakama wars? ))) that was pop-corn worthy drama ))))) I was a Yamatobro, and both Yamato and Carrot being left behind surely was a big up yours from Oda 🤣 I can laugh at it now, but at that time I was really disappointed, so I understand how you feel let down by certain Oda's decisions. Let it go. It's not worth it, constantly being let down and feeling negative over something you cannot control.

BTW, if you dislike OP too much rn, maybe it's best to drop it for a while and maybe pick it up later. If you still enjoy it, focus on the things you enjoy!

If we are talking roles, most are essential:
  • Captain
  • Combatant
  • Navigator
  • Cook
  • Doctor
  • Shipwright
  • Helmsman
Marksman isn't strictly necessary for the survival of the crew, specially when 99% of battles don't play out on sea.
Musician is really a bonus role, it only serves the porpuse of increasing the quality of the mood during the day.
Historian per se is not that useful for a crew's survival, but in One Piece it's focal because of the Poneglyphs.

If we are considering the whole character + his role in the crew, then Usopp is definitely the least essential.
