If he had it, Zoro wouldn't be wondering about it like this and would be able to remember Mihawk using it. Adcoa wouldn't seem to catch his attention.
It seems like it's the first time Zoro has seen this form of haki.
Someone who knows something doesn't wonder, could tell which haki you wanna learn or using :
Luffy wasn't shocked when Hyou used barrier, he didn't wonder like it's something new, he knew and has seen Ray and Sentomaru use it.
Hyou could tell Luffy wanted to learn barrier so he showed it and he also knew level 3 exists even though he didn't have it.
Zoro's comment wasn't "oh just like Mihawk, so he learnt it there" " oh you can use this too (like Mihawk or me)"
Hyou was somewhat like ' are you trying to learn this boy..?"
Kaido when retainers use ryuo " ... Oden ryuo?"
People who have witnessed/heard or have a skill that's rare or special, recall the person who has it (either themselves or others)
FS and Adcoa (Penetration) are rare, only a few have them or both at the same time.
Mihawk only has barrier/flow/repel. He's not the best CoA specialist.
