When you turned 18, you didn't just magically mature into an adult, even though society deems that as the age one is considered one.
I think people forget that Sanji is only 21, and I can guarantee you that even at that age, you're still hanging on to your personality from when you were still in your late teens.
You mature over time as you grow older and experience life

he didn't really do that in enies lobby . that's growth so honestly using realism as an excuse for something that there isnt even an attempt to change is funny.
