If Sanji is intelligent at any level he'll know that scientists make mistakes and what was a fact before can change later.

You get told something as kid ,you believe X is the only truth but then you discover something that changes that supposed truth.

Except when he goes back he's still told he's completely human. The only thing Judge commented on was his use of Haki which happened before he used any flames but blocked his attack with his knee.

Once he showed fire the only ones to comment were non-scientist guards.
