You go to sea only because there is pole star. Without that no one goes, because of pole star people started sailing I would say, as they know there is one guide. I don't think any one sailed without the knowledge of pole star, it's basically as essential as a ship to sail in unknown waters... Of course later compass came but pole star still matters as a source of truth

I doubt we will get info on all that navigation stuff... It's too late, and we are not really focusing on such aspects in the story.

And then He creates Mosa as Loki's Only Proof that He still seeks Love/Kindness/Approval,

If Oda just wants to portray Loki as Someone who's gonna be a Hero despite how He was treated, then He doesn't need Mosa,
But Existence of such Relationship suggest that Mosa might be Loki's Last Straw, He/She might be a Villain,
