Now with Zoro displaying advanced CoC stuff and Mihawk reigning supreme above all swordsmen as the WSS with a black blade, it's certain that Mihawk also has advanced CoC. Not sure how Shanks' CoC is especially unique. Even if Shanks' CoC is stronger, Mihawk makes up for it with superior swordsmanship and (probably) CoA.

I would think it would be nice if Mihawk didn't have CoC, but was the best user of both armament haki and Coo ... Shanks having the best CoC and advanced Hakis.

Yes, WB had obviously declined. But not as much as people like to make it up. The only major things he lacked was good CoO and stamina which are an obvious result of old age. Look at BM for example. Other than that his strength was not lacking. You think Shima Yurashi was a weak attack? lol. It was in probability stronger than Hakai.

Yes, it's prime Mihawk and old WB, but what makes you think that old WB can't be stronger than Mihawk? The difference between prime WB and old WB isn't as big as people make it out to be. He only lacked really good CoO and Stamina.
