Well, beating Kaido "1 vs 1" is only the end result.. Just like beating Doffy "1 vs 1" was only the end result because Doffy already ate Gamma Knife before. Now kaido already ate Asura, Gamma Knife, Killer's attack etc.

And don't forget the "gladiators worth 1 village, Gatz, and Viola" equivalent in this arc. There exists samurais, yakuza bosses, Granda Hyou, scabbards for this reason. To act as Luffy's meatshield once his haki running out again

From what I can gather, Zoro uses CoC in Ashura mode but he's not advanced enough to know it. Whereas, Kaido and Luffy are more adept at wielding CoC similar to Roger and WB.
