Eh I just think oda will go the easiest path of making Sanji be able to soften his body like how he turned off his armament haki for Black Maria.

Well, Oda loves to showcase his CoO, especially in these situations, so needing to avoid getting hit would make be very fitting (for more reasons than one to be fair). Being able to turn his Exoskeleton "on" and "off" would kinda ruin the meaning of Sanji being someone who has to make choices even when he basically can't choose because things were already set up to happen, so he simply has to accept it (such as the Exoskeleton awakening)
