Full knowledge only benefits Katakuri. When Flame on King cannot tag Katakuri he needs to increase his speed which is exactly what Luffy had to do, we can go by the canon and safely say that King is inevitably forced into speed mode.
That Katakuri would mercilessly smack him around for hrs is something even you acknowledge, again, attacks like Power + Buzz cut mochi already do enough damage. Add the lethality of Mogura and King is completely at Katakuri's mercy.

You do realize every time Luffy left the mirror world, he was fighting for his life to avoid Linlin or other threats. Katakuri wasn’t? He was able to recoup stamina doing nothing.

King doesn’t need to do that—flame on mode has no evidence of requiring much if any stamina and Kaido outright said Lunarians are known for their endurance.
