How do you go from stabbing to cutting an arm off? I'm sure a healthy Queen in his 20s/30s with an ancient Zooan has better durability than old Whitebeard. Whitebeard's durability was trash. Random bullets were hurting him. He just had ridiculous endurance.

Queen before 20 years was not as strong as he now, it is quite possible that Kinemon was the one who cut his arm.
and to be honest we didn't saw Kinemon fight seriously more he was trying to conceal his identity the whole time

Whitebeard could take canon strikes to the face just fine. His durability is fine. And Queen himself is not made off some super strong substance. He's flesh, and unless he hardened himself, he's susceptible to cutting attacks, especially one from a Swordsman who knows Armament Haki.
