Because on that scale, we are limited by the technology of our times. Hubble was the best we had. Now with Webb, we are learning more things than we could with Hubble.
But that's not similar to the Global Warming conversation AT ALL. We have the technology and capabilities to understand and observe Global warming and it's effects.
It's a very real and observable phenomena that we are actually feeling the effects of today and the past few decades.

Science evolves with technology and learns new things. It's the pursuit of knowledge. And everything we have learnt about the earth and the sun and our climate and our eco systems tells us that Global warming is happening in front of our very eyes.
Trying to disprove it by straw man-ing it and comparing it to humanity's interstellar knowledge, which is still currently being researched and studied up on, is nothing less than astounding stupidity.
Let me give you a simplified example of what you're arguing:
Global warming - it's like zoro getting coc.
It's already happened. And we can see the effects of it.
Webb contradicting Hubble's findings - it's like saying Zoro will fight Kizaru.
It's not concrete by any means. It's one of the prevailing theories. As we get more information or more chapters, it may or may not be proven to be true or false.
