Hes huffing and wheezing after clashing with a biscuit soldier for a few exchanges and he only used gear 2nd. His stamina was trash and then it skyrocketed.

Luffy's durability and stamina are as good as the plot want them to be.

Depends how one uses it. Cracker uses his df very efgiciently compares to Grus as in his soldiers being durable, however Grus golems have logia property.

If Grus is a paramecia it works even better to his favor as they can avoid haki weakness. While as we have seen with Smoker if a logia user extends their range too much it only gives a haki user more room to hit them.
