Maybe Oda just showed the panel where they touch but the next one he may show Sentomaru was sent flying over walls and is already defeated. Just a possibility. Also Oda never showed Luffy freaking out over a strong opponent before. And he already took Kaido out. Remember he didn't freak out when in front of 2 Yonkos at Onigashima rooftop.
