I think Sanji might actually defeat king. We saw sanji vs king in the anime opening, which previously spoiled denjiro being a scabbard.
But more than that, I don't think there is any point in Oda setting up a fight if its not going to fruition. I could get this being "just a clash" if it happened in act 2 like sanji vs page one, but this is literally the main war.
There are so many characters that Oda has to set up, that we probably aren't going to get to any main fights for at least another 5 chapters. So there is no point in setting up Sanji vs king, by having them have an extended conflict this chapter, and then throwing it aside so sanji can fight someone else.
This isn't marineford, where the main objective was to grab ace and run. The goal of this war is to defeat the two yonko and their armies. So there aren't going to be a bunch of clashes here and there. Sanji is fighting to defeat the beast pirates.
And also, Sanji vs king didn't seem to be just a clash. King was actively trying to take out sanji.

If Oda wanted sanji to fight Queen, then why not have queen intercept him? If it was going to be Who's Who, then why not have Who's Who intercept him?
it seems like a waste of panel space to set up sanji vs king and then have sanji and king fight different people. There's a reason why Oda is making Yamato fight ulti and not black maria or smoothie.

that being said, Sanji might not necessarily win 1v1 or without plot. More than likely, sanji will get help. perospero wants to take out king as well and idk if Oda will really miss the opportunity to show marco vs king.
but I think Sanji will get the final hit. As for King's swordsmanship, I think Sanji will counter it either by picking up a sword himself or by learning rankyaku.
