Too lazy to do a poll.
They started to decline around fish man island with some highs and lows since then, but I think the main culprit is the fact that only the monster trio get fights now, so fighting choreography becomes repetitive and predictable

Half-SHs don't have any Fights
Luffy's Fights didn't decline imo
Same for Zoro

Can you give few Examples?

Luffy fight has been declined the most. From creative use of mediocre devil fruit to the chosen one with unlimited haki, stamina, and selected by god fruit. His weakness with blade is also gone with Haki, making him invincible.

Zoro is next. From sword play to haki fight. And now even barehand could block sword. I dont see any advantage of swordmanship anymore.

Everything in the manga just feels more condensed than it used to be. Don't know how to properly explain it but the action looks "cramped" most of the time.

Choreography doesn't come close to what it was in Enies Lobby and the big double spread moments are not as cleanly drawn. The scale that was captured in Marineford still has yet to be matched despite recent arcs having plenty of moments that should have been just as jaw dropping. Looking back at the spreads of WB's quakes, the admirals' powers, Mihawk's iceberg cut or even Jozu throwing that ice block and I can't pinpoint any panel in Wano that impresses as much.

Overall, the art has just gotten more messy and the panel to panel action no longer allows cool and detailed exchanged to be properly illustrated.

there arent any in dept strategy to the fights, its just overall boring choreography of people hitting each other. they don't even dodge lol. just statcheck each other pretty much

There's also the fact that larger guys look bad regardless of powerscaling if they get manhandled by someone a lot smaller

Burgess wouldn't look so bad if He was Sabo's size, but the size difference makes the stomp he got pretty humiliating for example, and that's a guy who we are supposed to take seriously as a Yonko commander
I have no problem with size difference. If you had an unlimited pull of power to pull from with training and genetic size really wouldn't make a difference. I mean if Roger reaches 5 million douriki does it matter if whitebeard is a couple of feet taller. I mean even in the real world if I bench 300 and you bench 300 height doesn't matter. Longer limbs might give you reach advantage and MIGHT help you generate power but being smaller makes you a smaller target and gives you certain other advantages.

I don’t think knowing that the Strawhats will win makes a fight bad. Execution is key.
Besides a lot of the stuff already mentioned like over-reliance on Haki, Oda not caring, etc…some of the fights just seem soulless and repetitive.
Relying on the same tricks (like last minute power ups) just makes things boring.

Battles becoming "my haki is better than your haki". Things like Luffy using his blood to beat Crocodile doesn't exist anymore.

Plus there is no tension or any stakes anymore.
