Joke answers aside on this thread, the biggest animal that most people could take on is a cheetah.

Cheetah is basically a big cat that puts all its stat points into speed, it has almost no fighting capabilities, no climbing skill and its stamina is pretty bad once it reaches it max speed.

I heard somewhere in the news that some skinny African dude got chased by a cheetah but the cheetah got exhausted so quick that the African dude fisted the cheetah to death.

And with my current gymrat build, I am confident enough that I could take on a cheetah and survive. I obviously wouldn't get out unscathed, I would probably have bite marks on my arm or my leg, and a few claw slashes on my chest or two.

A normal person yes. Its bites are bad if you get hit but if you can avoid the mouth then you're good. Its claw wouldn't deal massive damage to you and the bones of a cheetah are brittle that are built for running, not defending or fighting. So a guy that has some MMA and boxing experience like me can deal with a cheetah.
