That's an excellent question. If I could truly only pick one, I'd say Okami, Super Mario 64 or Zelda : Ocarina of Time. One of those 3 definitely.

Honorary mentions include Portal 2, Borderlands 2, Goldeneye 64, Banjo Kazooie, Timesplitters 2, Beyond Good and Evil and Prince of Persia Sands of Time or PoP 2008, Super Mario Sunshine, Diddy Kong Racing, Jet Force Gemini, Resident Evil 4 (Not the remake) and Skies of Arcadia.

Final Fantasy 10 - As far as single players go this has never been surpassed for me and I still replay it every few years.

More of a multiplayer gamer though so TERA, Blade and Soul, Brawlhalla, would be my favourites. Anything with a solid PvP focus.
