Ui Ui no mi (Fish Fish) Dragon Modeled I suppose. Only being dragon modeled makes sense since anything different would not explain Kaido's dragon-like transformation.

However Kaido is no dragon, I mean by race.

Based on the other mythical Zoans it’ll be the Fish Fish Fruit, Model: Dragon.
Um, no.

(1) Mythical Zoans have a SPECIFIC myth creature. Phoenix, Buddha, 9-tail Fox, Yamata no Orochi, etc... "Dragon" is too generic.

(2) Fish are not dragons. Mythology aside, base DF has to match model.

Phoenix is a bird.

Buddha is a human.

9-tail Fox is a canid (also called "Inu").

Yamata no Orochi is a snake.

The only "violation" we have is from a video game (Oda designed I think) where we have Bat Bat no Mi, Model: Vampire, where vampires turn into bats or something. So it could be something like

Uo Uo no Mi: Shenlong model or something.

I wouldn't be surprised if he is something like "Leviathan", but he does seem to be more eastern oriented.

How is “dragon” any more generic than “phoenix” or another legendary creature

Dragone aren’t real, if Oda wants to say his dragons are fish because of the eastern legend of carps becoming dragons that’s up to him. Doesn’t break any rules.

Chopper eat hito hito no mi but we never know what model it is, is there a possibility that Chopper actually eat a mythical fruit? What if he eat hito hito no mi model titan?

My best guess at this point is the ryujin but that is definitely in no way a fish.

The only thing that fits is the koi idea but maybe that ends up too obvious or something

In any case there was an idea that he actually looks like the original portrayal and that the common form we see is a hybrid form. I like it even if it's likely not true

He was human or human-like when he was part of the Rocks. He definitely looks like Chinese dragon now. There is a Chinese dragon, called Feilong. He kind of fits Kaido's description

If he's a koi or karp turned dragon, does that mean zoans can evolve, awakened zoans? That would be a crazy revelation.
I think he is just what the DF lends him and he has always been like that. The dragon stuff represents just what the fruit is modeled with but it is not an indicator of a peculiar transformation overall.

Uo Uo no Mi, model: Leviathan. The name itself sounds really badass. The dragon form is just the puny form.

Another badass name, Uo Uo no Mi, model: Tangaroa. The whale god of the ocean of Maori cosmology.

If it absolutely needs to be some very specific legend then it’ll be Fish Fish, Model: Seiryu.
Nah, not a specific myth

Like Phoenix as a term isn't a specific myth. There's phoenix everywhere in myth

It just can't be "Dragon" since Dragon fruits as a term already exist. Oda wants to create a distinction so he would use a speiuf term for the type of Dragon Kaido is while not naming a specific dragon that exists in myth

So it would be Uo Uo no mi: Long.

Since Long is the general term for all those Chinese dragons
