Luffy vs Kaido was never a 1v1 though. Kaido literally already went through 40 chapters of gauntlets, it hardly counts as a Luffy vs Kaido 1v1 at this point.
It will be classified as a 1vs1 within the manga, so fan headcanon doesn't matter.

Luffy was injured severely and knocked out when he was weaker and didn't properly know adv CoC and he doesn't have mythical Zoan durability/regen.

It's not fan headcanon when that's what literally happened in the manga.

Kaido had no rest and fought for 40 chapters and took hits from more than 10 characters.

Luffy got a good rest and even eat meat before riding Momo to "1v1" Kaido.

If people within the manga consider it a 1vs1 that is Oda telling us it is a 1vs1.
It is fan headcanon to project damage or stamina drain on Kaido, when he is still fighting in near perfect capacity, with no sign of slowing down or being impacted by whatever minimal damage characters other than Luffy have actually done to him so far.

Do you really think, after Kaido loses 1vs1, people WITHIN the manga will be giving footnotes to Luffy's victory?

No, Luffy will surpass Kaido, as he surpasses every foe he defeats, and trying to sell Luffy's victory short is ignoring the canon portrayal of the victory in favor of damage spreadsheet autism.
