"Non-essential" and "easy to replace" are two different things. Brook might have the least essential role, but I don't think it'd be necessarily easy to find a musician as good as he is. I think it'd be easier to find a helmsman who does his job as well as Jinbe, his added value has way more to do with his combat skills than anything else.
