I understand his character more then you, of course Xebec was stronger then Apprentice Kaido.
The point that you seem to be missing or just glossing over is that Kaido said that those 5 were people that could fight him. Xebec would destroy apprentice Kaido therefore he was comparing them to his prime self.

Shanks’s brief showcase of his power in 1079 was enough to send the Meme > Shanks take to Davy Jones Locker along with Mid, and it also put the Kaido > Shanks take on life support. I suspect that Shanks’s next showcase of power will be enough to make Kaido > Shanks look like a bad joke. I’d advise that you start bracing yourself for it

Big mom was 2vs1ing them + needed island sized bombs to BFR her away from a flying city. They won by throwing her away.
Law is an amazing support, If he was present when Shanks attacked Kidd then he wouldve had a harder time finishing the two off.
Bear in mind she had the two of them laying on the ground at her mercy with both their crews crying for mercy and then they backstabbed her when she turned her back on them to go to the rooftop.

BM had to land many attacks on them just to get them to lay on the floor for a few seconds. Shanks 0.5 shotted Kid with a move that's just his version of Thunder Bagua. Shanks in 1079 showed that his speed and AP are vastly superior to BM's. The only way that BM could possibly be > Shanks is if Shanks has Cracker level endurance. Which obviously isn't the case since he has some of the strongest willpower in the series, and willpower is directly tied to endurance. Not to mention that his CoA should be some of the best in the verse. BM > Shanks is just delusional.
I think it is safe to say that Xebec did beat Kaido's ass at some point. Maybe Kaido challenged Whitebeard during their time on the Rocks Pirates ship. Maybe Roger defeated Kaido during God Valley or sometime before or after.

Shanks was bloodlusted and wanted to end it asap. Big Mom was not taking them seriously most of the fight and the fight reflected that.
Top tiers behave differently in fights and have different personalities who wouldve known. Now Im not saying she has similar AP to him thats kind of his department imo being that hes a swordsman that only uses Haki his haki should be superior to that of his peers but she has other things to compensate for.
I do think he likely beats her in a fight but its going to be a tough fight neverthless.

If Kaido and Shanks had a full on fight during MF, they're close enough in strength that by the time one of them wins, MF would be over and neither of them would be able to achieve their goals. Kaido is smart enough to know this, so it wouldn't be very surprising if him and Shanks just flexed their CoC against each other to determine who gets to go to MF. If so, Shanks would obviously come out on top since he's Mr. CoC. Given how much Kaido values Haki, it's not unreasonable that he'd consider losing this CoC showoff to be a "defeat". This is just speculation obviously, but there had to be some sort of show of power between the two. Kaido wouldn't turn around and forget about fighting WB one last time just because Shanks told him to go home

I dont think he was defeated at all they just clashed, fought a bit. Kaido was impressed and deduced that fighting this guy who is clearly strong would take a long while even if he won the war would be over so he packed up his things and left.
There was also the fact that he was alone with King which likely helped in that decision.
For the record I am open to Shanks maybe being stronger then Kaido if Oda wants to retcon it or whatever but right now I see them as about equal with Kaido edging it. I dont think its such an outrageous take to make.
