Basically, pre-timeskip Zoro have a lot of humane traits and growth. Post-Timeskip Zoro is like Saitama. Beating his enemies fairly easy with no growth or character development. He's more becoming like typical Shounen badass character aka Vegeta rip-off (Zoro > Vegeta btw).

That's where you're wrong.
Vegeta > zoro.

On the other hand, I have not seen Zoro beat YC1/2 level opponents.

Yet, he has shown potential as he scarred Kaido and faced Hakai.
But, I still think a fresh Zoro against fresh King would have been a wayyy better fight.
Oda gave a good feat to Zoro, but it could be better.

It may start another debate but, I think Zoro is over hyped by fans and Oda alike.

what's more boring now is that he can copy every haki technique from his opponent.
it already happened twice, first Kata (CoO) and now Kaido (CoC).
i find this very annoying, i really hate the "copy by seeing" clichè unless it's well justified (e.g. Kakashi)

Like most of his fights are either Zoro low diff or mid diff. Maybe some high diff but that's it.

I don't think being strong automatically means someone has no character development.

That is destined to happens. The prophecy and chosen one plot are bound for every Shounen MCs. It's just matter on how the author will handle it. Take Ichigo for example, man is a human and a Shinigami. Cool.

Then he got Hollow, Quincy, and Fullbringer Hybrid without any build-up at all.

Luffy's Voice of All Things was foreshadow back in the first couple chapters and later got retconned so it's not a PIS.
