Take Haki out and Zoro's combat arsenal is far more versatile than Sanji already.

He never saw his attack landing on Sanji, that's the present, the future he saw was Sanji dodging the priest. He changed that future hence why Sanji doesn't dodge the priest but Kata. At this point, Kata isn't looking into the future because he already did, you know that's how his FS works right? He sees the future and act accordingly, it doesn't mean that it's undodgeable unless you use FS, otherwise Luffy would have never been able to dodge Kata's attacks.

Katakuri seeing what is going to happen and being stopped from doing something against it is one thing, that happened in the Tea Party due to interferences.

Seeing and acting to prevent something from happening or just to stack up an action in response to something you already know it's going to happen is not the same thing at all

Find a panel where they explicitly say that Sanji has Future Sight. Character reactions can be interpreted in different ways and should not be taken as evidence

Katakuri figured Sanji was impressive enough to dodge that fodder's attack through his future sight.

He never bothered checking whether or not Sanji can dodge his own attack and hence confidently launched at Sanji.

Sanji dodged that to, to Katakuri's surprise. You see the operative word "Surprise"

If Katakuri actually looked into the future and saw Sanji taking that attack, that's an incorrect future, meaning there is fundamentally a flaw with Katakuri's future sight.

Luffy first expresses his desire to also see a bit into the future and says he will surpass the Billion Berry man at his best.

Luffy starts seeing into the Future a bit.

Doesn't change the fact that Luffy was already stressing out Katakuri by dodging his offense, even when he had nothing but basic CoO.
