As far as I've checked, in chapter 818 it's only said that Oden knew how to read and write the language, but then Momonosuke states that the poneglyph themselves were created by his very distant ancestors. Nothing about Odan being able to write on the stones.

its stated that the stones were created by Kozuki and they knew how to read and write them and the person carving it was shown, and was stated that that the technique was passed down to Oden

I think Oda screwed up when it came to diamonds. They are extremely hard but not remotely as tough.

Diamond is actually easy to break; it's hard to scratch, but it's relatively brittle.
