Zoro didn't have 'adCoC' in his arsenal when the rooftop happened. In only the last attack unconsciously he unlocked CoC. Who knows Sanji 'probably' unlock something to contend with. We are doing 'maybe, could've, would've' game, so anything is possible, since Sanji didn't go to rooftop.
Kidd, Law, and Killer also didn't have 'minimum' requirement of advanced haki techniques to be on the rooftop.

The user becomes stronger, his CoC will grow stronger. He trained for CoA and CoO. Again, read the manga.

armament haki is applied the same way as conquerors.
its why when luffy used it he had a Hyou flashback teaching him about armament haki. so for your point as to why oden was suprised, its the same confusion luffy had in udon about ray or sentomaru's prowess with armament.

The concept of not touching the opponent isn't just a thing unique to conquerors, its the exact same with armament. they are used in similar fashion in combat.

The only time we've seen two people clash by not touching is when they use adcoc.

There are 3 pieces of evidence here
1. No adcoc drawing for Oden's attack
2. Oden not knowing that Roger's attack was adcoc.
3. Direct parallel with Oden and Law reacting " they are not even touching" when looking at two adcoc users clash.
