Zoro didn't beat Pica without a mobility assist and furthermore without Pica confronting Zoro in the retarded "King ILOVESWORDS" fashion, rather than using his fruit to stall/attack.
Pica without his fruit is quite a bit weaker than Vergo, so Zoro of course shouldn't struggle with him in that state.

Katakuri should have taken the drug and let Luffy punch him several times to even it up properly.

All Zoro had to do was unleashing a powerful attack in order to end the thing immediately. His life was never in danger, he was in control of the match because he had the potential to end it quick not only just potential to end it, he was basically not injured, this is what I call mid.
