I kinda agree with you here, post time-skip Luffy was underwhelming. His only real power-up was G4, since many characters leaned haki without special training [Smoker, Law, etc].

Luffy realized that Kaido was using AdCoC in his attacks after being hit with them. He then took the concept of how to flow your Haki that Hyuogoro taught him, and applied it to CoC. It makes perfect sense.

There was NO INDICATION WHATSOEVER Luffy can use CoC on his fists. Not only was the clear indication that only the Top Tiers can use the ability like Roger, Whitebeard and Kaido, there was also zero indication Luffy had reached the point that he can use it. Luffy also just learned it the second after he got hit. It was a complete asspull that turned Luffy from getting obliterated and being unable to keep up with Kaido to fighting toe-to-toe.

Ask Oda, who didn't even bother going in-depth to this and randomly asspulled it to give Luffy the edge. Kaido said only the STRONGEST CAN USE IT. Only Whitebeard, Roger, Kaido and Big Mom can use it. Luffy was nowhere close to them before he came out with with this asspull and suddenly caught up to them.
