kLuffy will defeat Kaido at the end and Kaido already hinted that himself as he said that Luffy couldn't be Joyboy, which means that if Luffy got that power he will be able to defeat Kaido. and we already know that Luffy is the only possible option of being the current Joyboy:

1. Luffy's friendship with Shirahoshi and his promise are similar to that of Joyboy to the first Poseidon
2. Oden speaking about the figure that will come in 20 years to Wano and will be the one who defeats Kaido and his journal Yamato already hinted that Luffy was the right one and not Ace.

Luffy is gaining new abilities to hurt Kaidou from a span of what, 1 hour? And you think that Zoro, who's already capable of shredding through Kaidou's toughest scale and defense, won't be able to decapitate Kaidou when he's healed and fully mastered Enma?

Zoro doesn't even know he HAS CoC, and that's what was needed to scar Kaido. The amount of asspull it would require for him to not even know he has an ability, to use it fluidly enough to actually decapitate Kaido would be astronomical. Even Luffy whose been using CoC since timeskip began is still sloppy with using AdCoC.
