Zoro will presumably aim for the Big fish either by killing or also defeating depending on his health status and level of performance of Luffy. If he will be on track in time perhaps he will simply join as Luffy most likely declared those words "I got this" factoring Zoro's health state specifically. So although perhaps he still want to finish the job he might lose and a more healthy Zoro than he is now jump in. Marco has got no substantial reason to withdraw.

That's not an actual build-up, though.
With Sanji and Queen, we got the "judge's son" lingering plotline since Chapter 995.
20 chapters later, in 1015, Oda finally continues it.
We don't have anything like that for Zoro and King.
This is why if Zoro and King do end up fighting, it won't be the main event for Zoro, the way fighting Queen would be the main event for Sanji.

CP9 was split up into two groups and the second group (kumadori and Fukurou) was defeated by Chopper and Franky who were one of three people following Sanjis lead through water 7. (Chopper when Robin said she was leaving the crew and Franky and Usopp on the sea train) so Sanji vs Jabra happening wasn’t a surprise.
Now it’s just “they’ll fight when they fight.”
The difference is Zoros showcased all he can do. Zoro isn’t going to go Asura against King if they fight but Sanji will still use his strongest techniques even if he’s against King and Queen

Of course but he spelled it whilst he stood in those pitiful conditions for instance. This is self-evident and although it doesn't implicate he necessarily didn't refer to his best state, it makes hella more logical consistence to believe he was merely referring to his current state.
Plus what do you mean by new move? Asura Onigiri itself was an attack he did never show up until then. It doesn't necessarily have to be something he yet did not come up with, as long as affordable whilst standing in his best health state. Even simply the raw quantity of Asura attacks he could throw if we will.
