That's not how it works. Swords can be defended against with strong enough COA. That's the whole point of needing AP.

Yamato has shown impressive haki suggesting she is capable of putting up valid defenses. Thinking that someone holding a sword = being able to defeat xyz is ridiculous

No... There is no need for AP if you can overwhelm your opponent with a style that he cant defend against.
That is the true beauty of Zoro's combat style - how overwhelming it is. Ridiculous AP is just a nice bonus.
