As Luffy said he can't do such things as using sword, cook, play music etc. Zoro's role at crew is being a fighter so he is the best on crew on it.

Zoros role is that of a swordsman. You know what Luffy said immediately after this quote:
“I can’t Use a sword, I can’t Cook food, I can’t even lie.”
“Then what can you do”
“I can beat you”

Meaning despite what everyone else can do. The one thing Luffy can do that the others can’t is beat the enemies.
