Doubt that it’s anything beyond energy. Currently I’m picturing he may be like Yumichika where he heals and revitalizes himself by draining the life energy of enemies

Also about Greenbull maybe it’s just his way to capture enemy and bring them back to HQ.. Similar to Caribou storing things inside his body.. l think Greenbull didn’t take their life per say but just captured them to bring them back to lmpel Down..

Not sure about this. Everyone is as strong as they have to be for the plot.
Oda's characters have roles to fulfil, individual strength doesn't really matter in One Piece
If Zoro and Sanji are in the arc, they are fighting the strongest subordinates. Kidd and Law will hopefully not fight the Admirals. They have no right and the fights would be bad.
