The Koi fish are animals, they may be able to withstand the toxins while regular humans cant
Luffy and Big mom are resistent as fuck, we saw how Zoro only got a stomach ache while Tama got very sick
We dont know when Jack did his dive, and it could be explained the same way as above
We know the chemicals are toxic, we dont know if they are corrosive

To emphasize the damage done to the Wano, an author that cares would have emphasized the damage the chemical shit had done via sedimentation in the sea floor and ruins, we just see clear fresh water.

I don't even care that much about Yamato. There are more important questions, people should ask. Will someone appear who helps the Germa escape from Katakuri? What happened to Orchi's fruit? Are Kaido and BM still alive. And others.
